SINGAPORE - When Hong Kong food critic Chua Lam said hotpot was lacking in culture and should disappear, fans from Chengdu to Bugis and Ximending rallied to its support.

On a talk show on China's Hunan TV recently, the Singapore-born Chua was asked which dish should disappear. Hotpot, said the 77-year-old.
