Capella Singapore is presenting up to 24 public dining events featuring chef Fabien Pairon, who in 2011 was named Meilleur Ouvrier de France (one of the best craftsmen of France) in the delicatessen and catering category. Foie Gras Wine Dinner By Il Cielo Italian Chef Catarsi

Hilton Singapore's il Cielo Italian restaurant is having a one-night-only four-course wine dinner tonight, featuring Italian signature dishes infused with foie gras and paired with the 90-pointer Nino Franco Rustico (rated by Robert Parker) and the 89-pointer Lis Neris Confini 2009 (Wine Spectator). Dishes include an amuse bouche of chocolate-coated magnum stuffed with foie gras, sea urchin and raspberry dressing.

Four Hands With Hideaki Sato And Bacchanalia's Ivan Brehm

Chef Hideaki Sato from Hong Kong restaurant Ta Vie is cooking with Bacchanalia's head chef Ivan Brehm next week. They will present an eight-course menu for up to 36 people each night. One of chef Sato's dishes is Surrealism, a poached oyster wrapped with wagyu beef and grated celeriac jelly. Chef Brehm will present dishes such as yellowtail kingfish, glazed and lightly smoked, then teamed with a puree of red veined sorrel, oxalis emulsion, crispy rice cake and guava.

Catalunya Singapore Cocktail & Tapas Bar has prepared three seasonal Easter cocktails: the Rum Hunt, an emulsified cocktail shaken with butter, black tea, Plantation rum and falernum; Hatched, an interactive cocktail served in a chocolate egg shell on a brown paper nest; and Truffle, a chocolate and fresh berry cocktail of vodka, apricot brandy and cacao white liqueur. The cocktails can also be enjoyed alongside Catalunya's three-day brunch party ($98++ a person) over the Good Friday to Easter Sunday weekend, with a special focus on traditional Spanish Holy Week recipes in addition to the restaurant's signature items, such as the traditional suckling pig and churros.
